Basic Marinara:
Chop one yellow onion and two cloves garlic. Sautee in 2 Tb olive oil with a sprinkle of salt. When soft add 3 cups of peeled and seeded Plum tomatoes. Cook on low for about 1/2 hour or less. You want a very fresh flavor to this. Add shredded basil and minced parsley. Stir in and and turn off the heat. Salt and pepper to taste. Toss with pasta of your choice or use in lasagna. If you want to make a spicy sauce add a big pinch of chili flakes or a pinch of cayenne with the onions and garlic.
